Savory pancake recipe

Lately I feel like I've been going to the market constantly. Well, I did today too, stocked up with vegetarian proteins and few other things. It's been overall a good week, alhamdulillah. What comes to the vegetarian eating habits, it's been going somewhat well. But I ate few pieces of meat at the dinner few days ago, when I (and husband as a moral support hehe) cooked first time kontomire and agushi stew and wanted to taste it. Was delicious! But I find it hard to find a good meat substitute for these type of stews, so either I enjoy the same dish with my husband or cook my own. I don't take pressure from this. There has been days when I have cooked purely vegetarian/vegan dishes, and then sometimes with eggs and cheese like today. I think it's improvement already, so in sha Allah I will continue and explore new recipes.

Today I relied on an older recipe, found good and tasty. I have shared this recipe in my blog before, but I don't think I've made it since, it's been a long time. A savory pancake, yum. It's very easy to do, and you can alter the recipe to your own taste. Here are the ingredients:


- 1 liter of milk (I used oat drink)

- 1-2 tbs oil

- 3 eggs

- 5 dl wheat flour (I used 3 dl wheat + 2 dl corn flour)

- 1 ts baking powder

- salt, black pepper, curry powder, paprika, cayenne pepper, thyme (I added dried basil too)


- feta cheese

- tomatoes

- baby spinach 

- spring onion

- grated cheese

or anything you like (I used Muu jauhis veggie protein, salad cheese, red onion, bell pepper)


Put oven to heat, 200C. Mix dry ingredients together, including spices. Mix eggs, oil and milk, and add the dry ingredients and mix well with a whisk. Take a deep baking tray and sprinkle some water on it. That will make the baking sheet stay on better. After you've inserted the baking sheet, pour the pancake mixture on the pan. It's very watery, that's normal. Chop all your veggies and other ingredients and add them evenly on top of the pancake mix. Bake in oven for 25 minutes, or until you see the cheese on top turning golden brown. Let it cool down a bit and serve with salad and a cold drink. :)

Yesterday I met one sister and her son and we went to a cherry tree park for a little picnic, pictures and walk. It was so beautiful ma sha Allah. It was good to be out, I didn't even mind too much about people even though it was a bit crowded, or let's say popular. It was a nice, warm, sunshiny day and we had the perfect timing to see the blossoming trees.




Tomorrow I have some errands to run and maybe I'll take myself to a walk too. Then I am thinking of going to pick at least one canvas to paint on, I found a good offer but it's in another city so a bit far.. In sha Allah. I am happy that I don't really have anything planned, I will just see what I want to do.

Yeah.. I'm so full of pancake and tea right now I gotta roll to the sofa and rest a bit. Alhamdulillah. Most of all I'm happy that I feel like as the spring turns to summer, my thoughts and mindset are shifting from planning to the living stage :) Don't ever think you can't have a happy life. It might seem distant, and unachievable, but trust me things do change all the time. And while you're on top of the mountain, enjoy the view.
